1-2 beets with greens, chopped
1-2 white onions, chopped

Hot peppers to taste (optional)
Enough filtered or distilled water to just cover the vegetables

Parsley: fresh, bright, vitamin-rich

Method
Place all vegetable peelings, vegetables, garlic, optional herbs, and water in a large pot.
Bring to a gentle boil, then reduce heat to very low and simmer for 1-4 hours.
Strain the broth into a bowl or jug, discarding the solids.
Drink the broth warm as a nourishing drink or use as a base for soups and stews.
